Chocolate does not seem to have an exact melting point.

The different melting behaviour is because chocolate is not a substance - it is a mixture of more than one substance.

A pure sample of a substance gets a little softer as it nears its melting point: it is easier to change its shape. This isn't the same as becoming ‘gooey’.
