  Watch the animation, and notice that the temperature of the water stays at 100°C while the water is boiling.  
 
 

 
100ºC is the boiling point of water.
A sample of water in the liquid state changes to the gas state when the temperature is just above 100ºC.
A sample of water in the gas state will change to the liquid state when the temperature is just below 100ºC.
When a sample of a substance is changing from the gas state to the liquid state we say it is condensing.
