Up to now we have used the general idea of a sample of a substance being a collection of particles. Each substance is a certain particle. For water, the particles are the individual molecules:

For salt, there are no molecules as such, but there is
the same pattern throughout the structure. In this case, we can think of the particles as being the repeating unit that gives the pattern.
